Grain-Free Coconut Krispies Bars Recipe

These chewy, crunchy coconut bars are reminiscent of everyone's childhood favorite – rice krispies treats – but made without the rice or refined sugar. Shredded coconut and honey melt together to make a truly delicious treat without cane sugar. The mix of good fats from the coconut oil, carbs from the honey, and (the real twist) the addition of collagen for a boost of protein makes these a balanced, delicious treat.

Grain-Free Coconut Krispies Bars Recipe

Grain-free, gluten-free, refined-sugar-free
Makes 9-12 squares

RECIPE INGREDIENTS

  • ⅔ cup honey - We love Wholesome because it’s organic, fair trade, and raw

  • ½ cup coconut oil - Nutiva organic coconut oil is organic, fair trade, and has a wonderful flavor

  • 2 teaspoons vanilla extract - Our favorite vanilla is Simply Organic

  • ¼ teaspoon sea salt - Redmond Sea Salt is our go to

  • 4 cups shredded coconut - We love Terrasoul Superfoods because it’s organic and ethically sourced

  • ½ cup collagen - Vital Proteins Collagen Peptides are a pantry staple for us


RECIPE INSTRUCTIONS

1. Preheat the oven to 225 degrees. Coat an 8x8 glass baking dish with coconut oil and line the bottom with parchment paper. Add more coconut oil to the top of the parchment paper.

2. In a medium-sized saucepan, combine honey, coconut oil, vanilla extract, and sea salt over low heat and stir  until melted and combined.

3. Add shredded coconut and stir until evenly coated.

4. Cool for 15 minutes (this helps prevent the collagen from clumping), then sprinkle in the collagen a little bit at a time while stirring to combine.

5. Spread mixture into the prepared pan, and using your hands with a piece of  parchment paper, press the mixture very firmly into the pan. (If you skip this step then the bars will be crumbly.)
